FRESH ALASKAN KING CRAB TAIL.





Worked with some new ingredients today... This is the first time I've worked with it... It looks pretty interesting... Spikey outer shell and tender, meaty interior... If I had to describe the texture, it's like lobster meat with a mild crab flavor... We prepared it scampi style with a six ounce filet of prime beef... It sold out within an hour.
